Liver sauce
Ingredients:
-200 g lamb liver cut in small cubes
-200 g lamb meat cut into cubes
-1.5 tbs tomato paste
- 2 teaspoons red pepper or paprika
-1 teaspoon coriander powder
-salt
-black pepper
-olive oil
-1 teaspoon cumin
-3 minced garlic cloves
-1 small minced onion
Instructions:
-In a pot on the stovetop, put the olive oil, minced onion, tomato paste, spices (EXCEPT THE CUMIN), and the liver and meat.
- Mix and sauté the ingredients for about 5 min over low heat and stir constantly.
-Add 500 ml of hot water and let the sauce simmer for 20 min.
-After 10 min, add the minced garlic to the simmering sauce.
-Once the sauce reaches the consistency you like, add cumin and let it cook for 2 min, then remove the pot from the heat.
-Garnish with chopped parsley and serve warm.
