Ingredients:


-1/2 cup extra fine bulgur wheat
-4 firm tomatoes, finely chopped
- 2 bunches of parsley, finely chopped ( stems removed)
- 4 green onions, finely chopped
- 12-14  mint leaves , finely chopped ( stems removed)
-1 English cucumber , finely chopped
- 1 teaspoon salt
- 3-4 tbsp lemon juice
-3-4 tbsp extra virgin olive oil
- 1 clove garlic minced


Instructions:



  1. soak the bulgur into water for 30 min  until tender .
  2. stir into a bowl the tomato, cucumber and  1/2 teaspoon salt and set aside.
  3. pour the parsley into a large bowl and add the bulgur, mint and green onion.
  4. -add the combined  cucumber and tomato to the mixture.
  5. In a small caup, whisk the lemon juice, olive oil , garlic and 1/2 teaspoon salt.
  6. Pour it into the salad and stir to combine  all together ( taste and adjust if necessary)
  7. Let the salad rest for 15 min before serving to let the flavors merge.
