A salty three-layer cake ''tajine el bay''




Tajine el bay is a traditional Tunisian recipe made of ground beef meat, spinach, ricotta, and eggs.It looks beautiful and tastes great. let's do it together.here are the directions.


Ingredients:

Meat layer:
-300g ground boeuf meat

-3 eggs

- 1 minced onion

-2 minced garlic cloves

-salt, black pepper

-olive oil

-ground coriander

-grated cheese


spinach layer:
- 2 bunch spinach chopped finely

-1 tbs butter

-2 egg yolks+1 whole egg

-black pepper, ground coriander

- a handful of grated cheese



Ricotta layer:
-250g ricotta

-2 egg whites

-black pepper

-grated cheese




Instructions:
-In a pot on the stovetop, put the oil, ground meat, garlic, onion, and the spices and mix.


-Cook the meat over medium heat then remove and let it cool.



-Once cooled, add 3 tablespoons of grated cheese and 3 to 4 eggs and mix well.



-Butter a cake pan and pour the mixture. Level the surface with a spoon.



-Bake for 10 min in a preheated oven ( 180 degrees C/ 360 F) until the surface becomes solid to the touch.



- In a frying pan, put 1 teaspoon of butter and the spinach and sauté until all liquid has evaporated.



-Let the spinach cool then add 2 egg yolks, 1 whole egg, grated cheese, and spices and mix well.



-Pour the spinach mixture on top of the meat and bake again for 5-10 min.



-In a bowl, put the ricotta, grated cheese,  and 2 egg whites and mix.



- Pour the ricotta mixture on top of the spinach and bake again for 10 min.



-Let the cake cool, then cut into diamonds or any shape you like.



-Garnish with roasted almond or pistachio.
