Ingredients:
pastry:
-500g
-1 egg
-2 tablespoons olive oil
-1tablespoon yeast
-1 tsp salt
-1/2 tsp sugar
-Oil for frying
-warm water
filling:
- 3 potatoes cut in small cubes and cooked in boiling water
- hard-boiled eggs
- tuna
- olives
- harissa (red pepper sauce)
Instructions:
-In a large bowl, put a glass of warm water and add yeast sugar and salt.
-Add the flour and egg and mix, add warm water until a dough is formed, then knead it until smooth (5 min).
- Cover with a plastic wrap and let stand in room temperature until doubled (45 min).
- Put the dough onto a floured work surface and shape into small balls.
-Open the beignet with a knife and fill them as you wish: harissa diluted in some water and olive oil, potato, tuna, eggs, and olives.
