Chicken soup
There is nothing like my mother's flavorful soup. Such classic homemade food is really good for one's body and soul and it takes less than an hour to enjoy its comfort.
Ingredients:
- 2 tablespoons olive oil
- chicken (or leftover of roast chicken)
- 2 medium carrots, sliced into 1/4-inch-thick rounds
- 2 celery stalks, sliced into 1/4-inch-thick slices
- pepper and salt
- curcumin
Directions:
- Put the chicken in a large pot and cover with 4 cups of water.
- Add the carrots, celery, pepper, salt curcumin and the olive oil and let it cook for 30 min over medium-high heat until the vegetables are cooked.
- Add 1/4 cup of rice and cook until the grains are just al dente, 10 to 12 minutes. You can replace the rice with 1 tablespoon of starch. When the rice is done, serve hot.
